GUANAJUATO, MEXICO: A sheer delight that to this day continues to please my diet soul is the food of Mexico. Having moved here from what has to be the Diet Country of the world, America, I was looking forward to the absence of diet commercials, diet billboards, diet mail flyers, and anything that had to do with diet.
America has got to be the fattest country in the world. Mexico is not.
When we moved to Guanajuato, Mexico we found a mere 25% obesity rate in this country. Compared to America's 65% - 70% it seemed like nothing to be worried about. And yet, Mexicans are worried about it. Until the advent of NFTA in which the foodstuffs, which make Americans fatter than hogs, were brought to Mexico there was a less than 15% worrisome obesity rate. Also, the proliferation of American cars here has contributed greatly to the unhealthy bellies and protruding guts of Mexican car drivers. In a city like Guanajuato, that has outstanding public transportation, Mexicans are not walking nor talking taking advantage of buses or taxis anymore. On any day of the week you can stand on a street corner and see car after car with one Mexican only, the driver, in them. They will take a car instead of walking to go the shortest of distances.
A departure from the traditional Mexican diet and an embracing of American junk and fast foods, combined with cars, has produced an alarming and almost overnight problem. Mexicans are getting fatter.
Somehow no one makes the connection. The American trash diet (Junk and Fast Foods), combined with the desire to have cars to drive a distance traditionally walked, is producing the same problem from which Americans are dropping dead.

One of my first jobs was as a waitress at an El Torito Restaurant. To this day, I can tally its seven flavors of margaritas at breakneck speed. I used to think that made me an expert on Mexican food. In reality, I only knew about heavy trays laden with cheesy burritos, overstuffed chimichangas, and obscene portions of nachos.
Is Mexican food healthy? Apparently not. The Center for Science in the Public Interest's highly publicized 1995 report on Mexican food told us that it's loaded with fat and sodium. But exactly what "Mexican food" was the CSPI discussing? The report focused on popular American restaurant chains such as Chi-Chi's and my old friend El Torito, and not on the food of Mexico, which is an exquisite and varied cuisine full of high-fiber complex carbohydrates, vegetables, and pungent fresh flavors. Indeed, it's a well-rounded cuisine with all the makings of a healthy diet.
So it seems that there are two "Mexican foods": the traditional cuisine that's low in fat and rich in nutrients, and the Americanized version. LAS CRUCES- Mexican food lovers may not need to put down their forks just yet in response to a report that slammed the cuisine as too high in fat and sodium, a New Mexico State University nutritional scientist said.
Smart preparation, lower-fat ingredients and saying no to extras like sour cream can reduce fat in Mexican meals that provide beneficial doses of soluble fiber, calcium and vitamins, said Ann Bock with NMSU's Agricultural Experiment Station.
